二月二炒蚕豆的风俗流传了很多年,没有人说得清楚,但临夏蚕豆好吃,是被世人公认。如今临夏蚕豆总产已居甘肃首位,以颗粒大、品质好、味道香著称于世,不仅畅销国内,在国际市场上也有一定声誉。
炒蚕豆 二月二炒蚕豆,是临夏的民间习俗。据老人们讲,这天炒了蚕豆,庄稼就不遭虫害,秋后五谷丰登。于是,每逢农历二月初二,家家户户炒蚕豆、吃蚕豆、送蚕豆、整个城乡散发着蚕豆特有的香味,洋溢着过节般的快乐。
临夏蚕豆营养丰富,吃法多样,既可当主食。又可当副食。嫩者供烹、老者杂饭、干之为粉、炸炒供茶,无所不宜。
蚕豆作为主食,与其它面粉混合食用,不仅改善了食物的风味,还起到了蛋白质互补而强化营养的目的。临夏人民素有以六成蚕豆与四成莅麦炒熟磨粉制成“花面”吃的习惯。还有的农家以蚕豆与青棵或小麦混合磨成“伙合面”做饭吃。用蚕豆与玉米粉混合做的“搅团”柔软胶嫩,吃起来非常可口,是临夏城乡人民冬季最爱吃的一种常见饭。
蚕豆作为副食吃法也颇多,有煮食加盐的咸蚕豆;砂炒、盐炒、土炒、干炒的酥蚕豆;油炸的兰花豆;添加多种调料制成的茵香豆、五香豆;和王米、小麦、杏仁、去皮蚕豆煮成腊八粥;青蚕豆去皮炒菜吃等。
蚕豆淀粉还可以加工成凉粉和粉皮,是别具风味的冷食。纯蚕豆粉条,质地优良,洁白精柔,是逢年过节家家户户必备的食品。
